Fluffy Doughnuts With Creamy Blueberry Filling

I can’t wait to share this recipe! These are really soft doughnuts with a creamy filling, so silky and so delicious. You will love this creamy filling, because it can be used between cake layers and also as a frosting. This filling makes a great topping for pancakes and French toast, and the flavors are easy to make, just use any flavor pudding mix.

Instructions:

1. All-purpose flour – 3 1/2 cups

2. Yellow potato – 1 medium(125gr.)

3. Sugar – 1tbsp

4. Salt – 1tsp

5. Yeast – 2tsp

6. Milk – 3/4(lukewarm), and a bit more if needed

7. Butter – half a stick(60gr.) melted, unsalted

Cream filling:

1. Heavy cream – 2cups

2. Jello instant pudding mix- 3.3oz box

3. Blueberries – 1/2 a pound

4. Sugar -1tbsp

5. Lemon juice – 1tbsp

Peel the potato, cut it and boil it. In the meantime mix the dry ingredients and put aside. When the potato is done boiling, mash it really good, you can use a sieve or a potato ricer if you want, to make sure there are no lumps. I simply poured a little milk and mashed, then poured a bit more and mashed, the consistancy was like a smoothie. I poured the potato and milk in the dry ingredients,melted the butter and poured it in too. Make dough and let it rise for an hour and a half. Afte the rising, put the dough on a floured surface and roll it with a pin to a 1/2 inch.

Use a cup to make the doughnuts, use the scraps to make more doughnuts. Put them on a parchment paper and let them rise for about an hour.

In the meantime make your cream filling. Put 1/2 a pound blueberries in a pot, add tablespoon sugar and lemon juice, cook on medium high until the juices have reduced a little, set aside to cool down. Whisk the heavy cream in a stand mixer or handheld mixer on high, for me the speed was 6. When soft peaks start to form add the pudding mix, mix for a minute then lower to a slower speed(at speed 2) and continue to mix, scrape the sides of the bowl a couple of times so you don’t have pudding sticking to it. You will see it turning into a silky yummy goodness. When it’s done, mix in the blueberry sauce, you can use a spatula for this.

Now you can start frying the doughnuts. Fill a pot up to an inch with oil and heat on medium high. Gently transfer the doughnuts into the pot and fry them until golden or dark golden color. I lowered the stovetop to 2, because they were cooking pretty fast.

Note:

This is a lot of cream filling. You can save the extra in a container, and keep it in the fridge, use within 2 weeks. This cream filling is good for topping pancakes, French toast, waffles.

Easter Bread

Ingredints:

1. All Purpose Flour – about 4 cups

2. Sugar – 1/2 cup

3. Yeast – 2 tsp.

4. Egg – 1 midium

5. Vanilla – 1tsp.

6. Milk – 3/4 cup (lukewarm)

7. Butter – 1/4 cup, melted

8. A little oil – I used olive oil     

Egg Wash:

 1 egg + a little milk

Add the ingredients in the order they are listed and make a soft dough. Coat the dough in oil and let it rise overnight. The next day, make three logs and shape them into a braid. Let it rise again about 30min to an hour. Before putting it in the oven, spread egg wash all over the bread and bake in a preheated oven at 400° for about 25-30min. 

Note:

  • You can add raisins soaked in rum for 20-30min, like I did. I eyeballed the amount. You can also add anything else you like in that kind of recipe.
  • Depending on your oven, it may take less or more time to bake it.

Focaccia Bread

I love focaccia bread and of course I had to make it. This recipe was given to me by an Italian friend, but I had to change the recipe because I use all-purpose flour, and the original recipe is with bread flour. The dough will be soft and sticky, but it shouldn’t be too sticky. If you are not able to handle the dough you can use water or oil for your hands, I prefer oil. Also, I’m using my favorite toppings for this bread, but you can use anything you like on bread. This bread is good for sandwiches too.

Ingredients:

1. All-purpose flour- about 4 cups

2. Water – about 2 cups(lukewarm)

3. Yeast – 2tsp.

4. Salt- 2tsp.

5. Olive oil

Topings:

1. Kalamata olives

2. Butter – 1tbsp.(melted)

3. Rosemary – 1tsp.

Mix the ingredients for the dough. It will be sticky and soft. You will need to stretch and fold 4 times, and every 30 min. Simply take one side of the dough, pull up and fold over the other side, do this with each side.

After the 4th stretch and fold, grease a pan with olive oil and put the dough in it, pan should be 10inchx13,5inch and 2inch deep, cover and leave it for 30 min. After 30 min, with your fingers make dimples in the dough, spread the melted butter, add the olives and rosemary, leave it to rise for about an hour. After an hour, turn the oven on 400° and bake for 25-30 min. Rising time will depend on how warm is in your kitchen, it may take longer.

It came out really good and in my kitchen the rosemary smelled so good.

Now, after I made this with olives, I’m thinking Parmesan cheese would have been really yummy on top.

Fruit Filling

This fruit filling is good to be used for cakes, when frying or baking with dough. You can use any combination of fruits, and you can also make jam. If you don’t like mixing fruits, use one type of fruit.

Ingredients:

1. Strawberries and blueberries – 1lb

2. Lemon juice – 2 tbsp.

3. Sugar – 1 tbsp.

Here I used it in fried dough.

Put the fruit, lemon juice and sugar on medium, and cook until it’s cooked, and the juices have reduced a little. Put aside to cool down. You can put it in the fridge if you want it less runny. Also, if you like it sweeter, you can add more sugar to your preference. This came out not as sweet.

Fried Dough With Filling

I’m so happy to share this recipe, because it is super yummy and easy to make. My grandma used to make these, and it was another favorite breakfast or snack. My kiddos also love them. They are good stuffed with jam, feta cheese or any other cheese. You also don’t have to fill them with anything. Fry them just as they are,and then you can top them with your favorite toppings or just sprinkle powdered sugar on top.

Ingredients:

1. All Purpose Flour – 3 cups (400gr.)

2. Milk – 50mil.

3. Water – 50mil.

4. Yogurt – 50gr.

5. Eggs – 1

6. Sugar – 1tsp.

7. Salt – 1tsp.

8. Yeast – 2tsp.

9. Olive oil – for frying

Put all ingredients in a bowl and mix until you make a dough. It should be a little sticky, but easy to remove from the bowl or hands. Let it rise for about 1 hour, or until it has doubled, this will depend on how warm it is in your kitchen. When it’s done rising, put flour on the surface, roll the dough as close as you can to a square, and 1cm thick. Then use a pizza cutter to cut it into squares. Then put the filling on top, and fold one side over the other and press with fingers along the edge. You can make squares again or triangles. For triangles, you simply fold over by taking one corner and connect with the opposite one. Fill a pot or a deeper frying pan about 1 to 2 inches with oil and fry them on medium (later you can recycle the oil),I fried them on 3.

I try to fry them to a toasty color on both sides.

By mistake, I sprinkled powdered sugar on one with feta cheese, but the sweet and salty taste was actually pretty good.

Easy Homemade Doughnuts

We all love doughnuts in our house. They are good for breakfast, snack or dessert. I usually make them for breakfast, but the kids will have them for snack too. You can use jam, fruit sauce or chocolate sauce to eat these, or just powdered sugar.

Ingredients:

1.Plain Yogurt- 1 cup           

2. Baking soda- 1 tsp

3. Sugar- 1 tbsp

4. Eggs- 4

5. All-purpose flour- 2 cups

6. Powdered sugar

7. Olive oil

Mix the yogurt with the baking soda and stir well. Add the eggs one at a time and stir good after each egg. Add the flour and sugar slowly and stir well.  Heat the oil in a medium sauce pan-should be about an inch deep or a little more (after you can recycle the oil), make sure it’s not really hot, because the doughnuts will be uncooked in the center. I put my stove top on 2. Use a cookie scoop to scoop batter in the pan. You’ll see that they turn over once one side is heated, cook until golden or brown on both sides. I once put salt instead of sugar, and thought they’ll be a waste, but we still ate them, jam and chocolate balanced the flavor.

Note:

Recycling oil – let it cool and using a sieve pour it into a jar. You can use it for cooking later.

Crepes

Who doesn’t love crepes for breakfast? My favorite way of eating them is with jam and feta cheese. The kids of course prefer Nutella or maple syrup. This recipe makes about 20 crepes.

Ingredients:

1 cup plain yogurt(not Greek)

1 cup water

3 eggs

1 tsp. sugar

1 tsp. salt

1/2 tsp. baking soda

3 cups all purpose flour

Note: You can make the batter ahead of time and keep it in the fridge. When you want to make the crepes, take the batter out and let it sit 20-30 min at room temperature and stir it. If you forget to take the batter out, it’s not a big deal, just stir really good.

Homemade Bread

Homemade bread is always better and cheaper. I’ve been baking bread for more than 10 years. You might think it’s hard, but the hardest part is waiting for the dough to rise. Once you have figured out the best time to make bread, you’re all set.

Ingredients:

1. Flour- about 3cups

2. Salt- 1tsp

3. Yeast-1tsp

4. Water-1cup

5. Olive oil 

Mix the first 4 ingredients and make a dough. It should be soft and a little sticky, but easy to come off your hands. Add about 1tbsp (15ml.) of olive oil and knead a little, then use just a bit more olive oil to coat it, put the dough in a bowl and cover with plastic wrap. Let the dough rise for about an hour until it has doubled in size. After about an hour take it out and knead a bit, shape the bread, coat it with olive oil and let it rise for about 30 min to an hour. After about 45 min of rising, preheat the oven to 400° and bake for 25min.

Note: The rising time will depend on how warm it is in your kitchen, if it’s colder it would take longer for the dough to rise. You don’t have to add oil to the dough if you don’t want to, just some to coat it, so it doesn’t stick to the bowl and for the second rising to give it a nice toasty color.

Taco Pizza

How did I come up with this idea? I don’t really remember. I just know we all like tacos, and there isn’t much difference between both, just the size. So why not try it?

Taco Pizza Night

Ingredients:

1.Oil

2.Ground meat

3.Taco suace(tomato sauce will work fine too)

4.Onion

5.Avocado

6.Cheddar Cheese     

Pizza dough:          

1.Flour-2 1/2 cups

2.Water- about 2/3 cup

3.Yeast-1tsp

4.Salt-1tsp

Make the dough and set aside. If you use meat with more fat, you don’t have to use oil at all. Cook the meat on the stove top, it will let fat out, at some point add the onions and cook for a few minutes, then add the taco sauce. Cook until the meat is cooked and set aside. Now make your pizza, top with the meat and add slices of avocado, add the cheese, preheat oven to 400° and bake for about 20 min.

Note: You can add any spices or veggies you think would go good on this pizza.
